Delicious (and easy) Salsa Verde

Entertaining over the summer has been a lot of fun and one of my favourite discoveries was the easiest pre-dinner drinks snack that everyone can get their hands into. The fact that it’s Italian only makes it that little bit more amazing.

Large bunch of Basil

¼ cup Extra Virgin Olive Oil

2 Tbl Red Wine Vinegar

Salt and pepper

300g Mozzarella

Loaf of crusty bread (olive bread if you can find it!)

Wrap your loaf of bread in foil and place in the oven to warm up (around 20 minutes at 180 degrees).

Pick the leaves of the basil (leaving a few aside for presentation) and place them in the food processor. Pour in the olive oil and red wine (I use a little less olive oil initially, then add more if needed). Blend up until a smooth consistency. Add salt and pepper to taste.

Slice up or tear apart the mozzarella into bite-sized pieces and lay out on a serving platter. Drizzle the basil sauce over the mozzarella.

Remove the bread from the oven and you are ready to serve. Such a simple and delicious creation that is perfect for surprise visitors pop over.
